Maybe...

I look for the best
not because I want to see a better world.
I look for the best
So I may have something to compete to

And that makes me feel good.
I like feeling disappointed in the world

I am not a perfectionist.
I am a coward.
Like a homeless man who dies from hunger behind the alley.
Like a filthy rich stock holder who dies in a car crash.
I have problems.

But I run from them.
Or cry begging them to go away...

I have this pity fest
where I would find the tiniest problems in life,
blow it up to the point where I can't see anything but that tiny macro dot.
I work my ass off trying to
"understand" the problem a little deeper.
The deeper I go,
the more confused I become.

I realize that I'm lost.

The problem's still there.

My Birthday

What do I have to say?
Nothing but thanks for all the wishes, singing, smiles, hugs, kisses that I've received.

I'm thankful,
I cannot comprehend the amount of wishes I have received from people all over the world.

but there is one thing that I have yet to receive on this very special day.
A conversation with my parents.
I'm homesick,
again.

I wish to talk to them.
I wish for a loving hug from my mom.
I wish for a jolly smile from my dad.
I wish for motherly pats on the head.

Rewind

Time.
Let's think of the past.
So I use to be horizontally challenged.
And I had a rough childhood because of this.
And for some reason,
I don't seem to have any other vivid memories
besides the hurtful moments when I was teased and made fun of.
I am a product of hurt feelings.
I am a product of other's low self-esteem.
I am a product of relational aggression.

Although I try my best not to hurt others the same way,
I find myself consistently doubting my ability.
My brain has been formatted to think self-criticisms.
My eyes sees myself being great at things.
But my mind can't seem to accept them.

Self-contradicting.
It's weird.
Such paradox in a being
is definitely too much to understand.

Worries

Are good. They usually come with good intentions.
You care. You are thinking of.
But when you allow it to extend through your entire life,
you can die worrying just about anything.
ANYTHING.
Anyways, so the truth has been revealing itself lately.
My life is constantly threatened by my worries.
"What ifs" and "I should'ves" and "If onlys".
"I'm a perfectionist" has always been the excuse.
I wanna be ready.
I wanna do well.
I want it to be great.
But the product is never enjoyed.
"It could've been better" is usually what comes to my head first.
Solution: Think context. Think goal. Think priority.
Difficulty level: HIGH

Habit 4 Think Win/Win Characters

Integrity: Identify your values and pro-actively organize and execute around those values on a daily basis, we develop self-awareness and independent will by making and keeping meaningful promises and commitments.
Maturity: is the balance between courage and consideration. The definition of emotional maturity I've ever come across--"the ability to express one's own feelings and convictions balanced with consideration for the thoughts and feelings of others."
The ego strength/ empathy balance, the self confidence/ respect for other balance, the concern for people/concern for tasks balance, the balance of courage/consideration.
People think if you're nice you're not tough. But win/win is nice...and tough. It's twice as tough as win/lose.
You have to be nice, and courageous. Empathetic and confident. Sensitive and brave.
The Abundance Mentality: Instead of thinking competition, and getting to the prize, the Abundance Mentality is the openness that one must have to the the word "success". It is the paradigm that there is plenty out there and enough to spare for everybody. It results in sharing of prestige, of recognition, of profits, of decision making. It opens possibilities, options, alternatives, and creativity.
Public Victory does not mean victory over other people. It means success in effective interaction that brings mutually beneficial results to everyone involved. Working together, communicating together, making things happen together that even the same people couldn't make things happen by working independently.
If we search deeply withing ourselves--beyond scripting, beyond the learned attitudes and behaviors---the real validation of win/win as well as every other correct principal, is in our own lives.

I am definitely making this...

Classic Peanut Butter Cookies

Yields: 24 servings
"Makes great cookies!"
INGREDIENTS:
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda
DIRECTIONS:
1. Cream together butter, peanut butter and sugars. Beat in eggs.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

Once you get into the building, find the Service Center locations. Ask around, Minnesotans are known to be really nice!

Oh how I wanted to see one tonight...
Oh well, I guess I'm not special enough.
Maybe next month, I'll have to look up for the next meteor showers.

I was able to sing for an hour today, and that made me really happy. I have not been practicing for 2 weeks, and I'm finally getting back on track again.
I have recitals after recitals to sing in next semester, so I should be working my ass off right about now.

Have to work in the coffee shop early tomorrow, so I better go and get my beauty rest.

International Student Hosts

Hello-
I am Evelyn Tsen, the International Student Orientation Assistant.
International Students will be arriving in the last week of August. This semester, we are expecting about 40 incoming students, which is twice the size of the group from previous years. Yes, it is very exciting indeed!
To welcome the students, we will be sending the students in groups of 3-6 to the warm homes of Augsburg faculty and staff on the 29th of August for a homey dinner.
We are currently looking for faculties and staffs who may be available on the evening of 8/29/08 (Friday) to host the dinners from 5:00PM to 6:00PM. Because of the size of the group, we are in need of your help.

Olympics

"Why settle for silver when you can get gold?!"
Isn't that such a bald punctuated question? I wish I can live my life with that attitude everyday.

I've been thinking lately. What is the difference between pride and confidence.
Ever since I was young, I have been told that pride is bad. Pride will bring failure. Pride is sinful.
What does that mean?
Am I not suppose to imagine achieving the impossible successes?
Am I not suppose to desire to win and be the best?
Am I not suppose to celebrate my successes?
Am I suppose to expect failure after each success?

I believe I have misconceptions of this word "pride".

I believe I can be more than what I am.

I want to bring it on. I want to set a pace.

Today, I'll be making coconut oat meal cookies.
Yes..I am having a cooking fest lately, and let me tell you, it has been great!

Feng Shui

I've been considering to have a feng shui cure in my room soon. So I decided to google "feng shui" up and this is what I've learned.

Feng shui (traditional Chinese: 風水; simplified Chinese: 风水; pinyin: fēng shuǐ; pronounced /ˌfʌŋˈʃweɪ/ fung-shway or sometimes /ˌfʌŋˈʃwiː/ fung-shwee in English) is an ancient Chinese practice believed to utilize the Laws of both heaven (astronomy) and earth (geography) to help one improve life by receiving positive Qi. Then I begin doubting about everything because I see how little I know and how little I've done.
I may also come to some dissatisfying conclusion in my session of questioning. I settle with my dissatisfaction...because I question the possibilities--I question the ideals.
It's more comfortable that way.

I'm only mean to people I like

I don't get it. Recently, a guy I know said that to me.
He's very responsible, has great work ethic, wonderful person....in the inside*I hope* said that to me.
I'm only mean to people I like, and I'm super nice to people I hate *which is most people*.
Why?
Why do people choose to be mean to their friends? Why is it funny to make their lives miserable? Why would you ever wanna put in the extra effort to be nice to people who you hate? I know a few others who love to do that. But why? Why waste the time? Why send the confusing message?
People like that worries me. People like that make it hard for others to trust them.

My Chicken Curry Recipe

  • 4 potatoes
  • 2 large onions
  • 5 garlic cloves
  • 2 tsp olive oil
  • 2 tsp pepper
  • 6 hot green pepper
  • 1/4 cup of curry powder
  • 4 tsp salt
  • 1/2 cup of soy sauce
  • 4 tsp tamarind/ mango paste
  • 3 tsp sugar
  • 1 stick of cinnamon
  • 1 cup of plain yogurt
  • 8 pieces of chicken thighs

Marinade Chicken:
  • 1 tsp salt
  • 1/4-1/6 cup of soy sauce (Approximate to your own taste)
  • 1/2 tsp sugar
  • 1 tsp of curry powder
  1. Boil diced potatoes for 15 minutes (Partially Cooked)
  2. Slice onions and mince garlics and peppers.
  3. On a hot skillet, pour olive oil. Then, mix onions, garlic, green pepper, tamarind/mango paste, salt, sugar, curry powder. Mix well.
  4. When onions begin to look cooked, move the mix into a hot pot.
  5. Pour water and potatoes into the mix.
  6. Then add the soy sauce.
  7. Once water is boiling, add the chicken thighs. Stir.
  8. Cover the pot, and set the fire on medium heat for 20 minutes.
  9. Add the cinnamon stick.
  10. Finally, add the yogurt. Stir.

Cooking Chives Pancakes

Yesterday, I tried to make myself some Chives Pancake with Eggs.
It did not turn out very well. It was too moist and gooey. It took too long to cook too.
SO, the next time I'm making this, I'm gonna use a crepe recipe with chives.
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
I will probably cut out the milk content. We'll see...

Pull-ups!

I did pull ups on an assisted pull up machine today.
And I LOVVVEEEDD it!
Although I didn't do too many reps, my body felt so worked.

Short Term Goal: By the end of this month, I want to be able to do pull my entire body's weight up with at least 3 reps of 10.
Long Term Goal: Be able to go camping and climb as many trees possible before fall ends.

Wiki: "A pull-up is an upper body compound pulling exercise where the body is suspended by extended arms, then pulled up until the elbows are bent and the head is higher than the hands, utilizing an overhand (pronated) grip.

Pull-ups primarily target the Latissimus Dorsi muscle group in the back, though many other muscles are involved in the movement. These assisting muscles include the Brachialis, Brachioradialis, Biceps Brachii, Teres Major, Deltoid muscle, Infraspinatus, Teres Minor, Rhomboids, Levator Scapulae, Trapezius Lower, Trapezius Middle, and Pectoralis Minor. This Looks Good!!



Oatmeal Chocolate Coconut Chewy Cookies

"A chewy oatmeal cookie with chocolate chips, shredded coconut, and chopped nuts. Great with or without nuts and coconut."
INGREDIENTS:
1 cup butter, softened
1 1/4 cups packed brown sugar
1/2 cup white sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
3 cups rolled oats
2 cups semisweet chocolate
chips
1 cup chopped walnuts
(optional)
1 cup shredded coconut
DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the milk and vanilla. Combine the flour, baking soda and salt; stir into the sugar mixture until well blended. Stir in the oats, chocolate chips. walnuts and coconut until evenly distributed. Drop by rounded tablespoons onto ungreased cookie sheet.
3. Bake 10 to 12 minutes in the preheated oven for a chewy cookie or 14 minutes for a firmer cookie.
4. Cool for 1 minute on the cookie sheet and then remove to wire rack. Cool completely and then store in tightly sealed container.

International Students

August is here and that means International Student Orientation is finally here.

I love doing this job.
Coordinating the orientation with Jim always puts me back to the mindset of an international student.
Watching the excitement in the eyes of the students give me so much joy.
The life they are about to experience in an American college.
The new perspectives they will learn in their courses.
The new friends they will make. You may even find best friends if you're lucky.
The new culture, food, and shopping malls.
For the Norwegians, their eyes are distracted by the cheap numbers on price tags.
And then I also get to see the down moments of their arrival.
Missing their loved ones, parents, brothers, sisters, their friends...
And how tired they get from the first day of orientation.
Surprising information about their living spaces, classes, meal plans, Augnet account, financial situations, etc.

Ah, yes...over stimulated youngins trying to calm themselves down in their brains.
Look cool and don't be a fool!
And the crooked smile that tries to hide but screams out "!@#$%^&*(!!!" from one corner to the other.

I love this job so much.
It reminds me of myself--of my first days in Augsburg...

Scallion/ Chives Pancake with Egg


A green onion pancake (also called scallion pancake or scallion bread) is a salty, non-leavened Chinese flatbread folded with oil and minced scallions (green onions). Unlike a true pancake, it is made from dough instead of batter, similar to the Indian paratha. It is available in China, Taiwan, and other areas of the world with significant Chinese populations in restaurants and as a street food item, and is also commercially available frozen in plastic packages in Asian supermarkets.


1 cup of Flour
3/4 cup of Water
5 stalks of Minced Scallion or chives
1/2 tsp of onion powder
or
1 tsp of salt
1 egg


Mix: Flour, water, minced scallion/chives and salt.
Beat egg in a separate bowl.
Pour and fry mixture on hot skillet.
Once mixture is half way done, pour egg on top.
Flip the pancake to fry the other side.

Japanese anime and their ridiculously hillarious title.
No no no, let's talk Twinkies. Yes, and then...
do you know what happens if you microwave a twinkie.
The thing is, if you cover up the three little holes at the bottom.
The Twinkie cream will slowly expand...and in about 3 mins, it will explode!
RIGHT THERE IN THE MICROWAVE.
However, if you take it out in like 2 mins and 30 secs...something like that,
you can set it out ...right...
and it will explode too! in a couple mins it will explode, but the explosion won't be as big.
....
Also if you microwave most plants it will explode in the fire...
especially dried peppers, i think...
one time, i took like half a bell pepper, like the totally none spicy kind,
and even though it wasn't spicy, it blew up if you microwaved it.
So like, if you get the super spicy one, you can totally microwave it and it will SPLODE in that lil box!!
Also, most horses are afraid of fish.
So, if you like throw a fish at a horse, it will totally run!
Coz this one time, I totally threw a fish at a horse at my grandpa's farm...
and it totally ran into a whole bunch of horses and it all like went crazy and ran into a corner and like 3 of them died...DUDE....
Also, did you know that committing arson...this one time i was at a gas station, and I got gas in a cup and light it on fire, and it totally burnt down the cereal section.
The guy was totally pissed but he didn't know it was me...which is why that other dood went into jail.....
